Castle Cookies

One of my characters, Josh, loves eating. I love baking and so I can imagine him liking my recipes. Try them and enjoy.

Castle Cookies : Basic cookie dough.

There is nothing easier than this recipe which makes 36 cookies in less than fifteen minutes preparation and fifteen minutes cooking.

Set oven to 175 C.


2/3 cup of butter or margarine

1 C sugar

1 teaspoon of honey (or vanilla)

1 large egg

1 ½ C of SR Flour


Cream butter and sugar in a mixer. Add honey and egg and beat. Add flour and beat until combined.


This is where you can get creative.

Divide the mixture in roughly two equal proportions and begin your adventure. The only rule is that you add ¼ cup of extra ingredient per half the mixture.

These are some of my ideas.

  1. ¼ cup of crunchy peanut paste
  2.  2 Tablespoons of desiccated coconut and make up the rest of the ¼ cup with finely chopped dried apricots
  3. ¼ cup of sultanas or raisins
  4. ¼ cup of mixed fruit
  5. ¼ cup of muesli
  6. ¼ cup of choc chips

Once you have mixed your ingredients well, roll dessertspoonful’s into little balls and place on a greased tray. If you make about 18 (per half mixture), you are on the right track. Flatten just a little with a fork giving a nice ridge for expansion without cracking.

Bake one tray at a time as middle of the oven is needed for 15 minutes.

You now have a cookie dough with endless possibilities using ingredients in your pantry. You’ll never be stuck with an unexpected play date and nothing to eat.
